Honey Bourbon Cranberry Sauce

This is yummy. I hope some of you have a chance to try it for Thanksgiving.

Ingredients

8 oz. organic cranberries, washed and picked over
1/2 cup fresh orange juice
1/2 cup honey
zest of half an orange or whole lemon
1 Tbs. good quality bourbon

Method

Bring all ingredients except bourbon to a boil. Simmer until all of the cranberries pop. Allow to cool a bit in the pan. Add bourbon. Refrigerate. You can pass the sauce through a sieve of food mill, if you don't like whole cranberry sauce.

  1. So last year, this set up a little too firm for my taste. It was delicious anyway. This year, I tried doubling the orange juice and reducing the honey to 1/3 cup plus 2 Tbsp. It is super tasty (I want to eat all of it NOW) but it is a little too loose this time. I did forget the lemon peel (which has a lot of pectin), so that single ingredient might make the difference. And/or next year I'll use 3/4 cup OJ.
