This cake is good. My non-GAPS friend said, "It tastes just like a store-bought carrot cake!" It tasted even better today than it did yesterday. I would prefer it with walnuts, but I didn't think the birthday boy would have, so I didn't include them. I will for Easter though!
Ingredients
1 cup honey
1 cup butter
12 eggs
1 Tbs. vanilla extract
1 1/8 cup coconut flour
1/2 tsp. sea salt
1/2 tsp. baking soda*
5 tsp. ground cinnamon
1/2 a whole nutmeg, grated
3 cups shredded carrots (about 6 medium)
Method
Heat oven to 350 degrees Fahrenheit. Grease 13x9x2 inch pan, and line bottom with greased parchment paper or a greased paper towel.
Melt honey and butter in a small saucepan over low heat. Cool. Lightly beat eggs. Add vanilla and blend. Add coconut flour, sea salt, baking soda, cinnamon and nutmeg, and beat until well blended, scraping down sides as necessary. Add shredded carrots, and stir lightly to incorporate.
Pour into prepared pan and bake 25-35 minutes until a wooden pick inserted in the middle comes out clean. Allow to cool completely and invert onto a tray. Remove paper.
Top with cream cheese icing, if desired.
*Not allowed on GAPS, but is SCD legal.

ReplyDeleteSierra here, not Teri, but just wanted to point out that coconut flour doesn't sub 1 to 1 with other flours because it absorbs so much more moisture. I'm sure you could do a blend but you may need to add additional pecan flour. Let us know how it works!

ReplyDeleteI'm going to make this for Easter and add beet juice to the frosting for a festive twist.
I also make macaroons with honey and stevia which turns the cookies light green. They'll be so fun together!
My housemate ended up baking it for me, with some modifications. I think she only used 8 eggs, she used ghee instead of butter, and she used part pecan, part coconut flour. Whatever she did, it was amazing. Everyone at my party was ga-ga over it and we've been fighting over the leftovers in our house all day! Thanks!!
ReplyDeleteOh, Sarah, I'm so glad it worked out for you, and that you didn't have to bake your own cake :) I was going to recommend that one ease up on the spices, if using less coconut flour. Coconut flour really seems to absorb a lot of flavor, and requires extra seasoning, in my experience. It's wonderful that your housemate figured it all out for you!

ReplyDeleteSierra, thanks for offering that advice; it's exactly what I wanted to say. I have a hard time getting on the blog during the week. It looks like Sarah's housemate used less eggs, which is another great way to get around that problem.
This sounds really yummy and I'd really like to make it for my birthday this weekend. But I'm on GAPS. If I leave out the baking soda will it still work??? Otherwise I may go with the peanut butter pie. Hmmmm.....

We are just getting started on gaps and I don't mind fudging on the baking soda if needed, but am wondering if you've tried making it without any. Would it turn out ok but just denser? Also, how much dried nutmeg would be the equivalent of 1/2 a whole nutmeg. I only have the powder. Thank you for sharing your recipes!!!

DeleteI'm sorry I forgot to list the addition of the carrots in the instructions! I will fix that now, but to answer your question, they can be added as the last ingredient. After you add them, stir gently to incorporate.
Regarding the nutmeg, I would start with 1/4 teaspoon, and see how you like it. Nutmeg is strong, but coconut flour really has a way of absorbing flavors--that's why my coconut flour recipes tend to be heavy on the spices and flavorings (like vanilla).
Let me know how it comes out with 1/4 teaspoon :)
